Gluten-Free Peanut Butter Cookies






I have been wanting to try these cookies for awhile (only 5 ingredients!), and decided to send B a final care package with them before his move.  B mentioned over the holidays that he loves peanut butter kiss cookies, but since those would be difficult to ship, I decided to do the next best thing - peanut butter cookies with chocolate chips!

I followed the recipe, except mixed by hand and added in chocolate chips to half the batch.  

Result: these cookies are sooooooo tasty!  Definitely will make these again.

Gluten-Free Risotto Cake



Risotto leftovers are not the best, but I found many suggestions online for risotto cakes!

I took the leftover risotto directly from the fridge, created a cake, and browned the risotto in butter....it took about 10 minutes per side.

Result: pretty good!  But this cake didn't particularly stick together - not sure why.

Gluten-Free Parmesan Risotto


Countdown to boyfriend: 3 weeks.  Need to learn GF cooking: now!

My favorite dinner is pasta with cream sauce.  I thought risotto could achieve the same effect, while GF.  Tonight I made my very first risotto!

The recipe I used was here: Basic Risotto Recipe.  I didn't use onion, and I used 1 cup of Arborio rice since I was cooking only for myself.

What I would do differently next time: uncork the wine before I need to add it!  Risotto in progress isn't supposed to get too dry, so the liquids (wine, broth) need to be ready to go.

Result: awesome.  But surprisingly time-consuming.

Background

Hello!  I am starting this blog to chronicle my adventures in gluten-free cooking and baking.  My boyfriend can't eat gluten (or dairy, or shellfish).  We've been dating a couple years, but have mostly been long-distance, so his necessary diet has not resulted in a huge change to my own. My extent of gluten-free experimentation thus far has been with Betty Crocker cake and cookie mixes (which are great btw).  Now that he is moving to the same city as me (!!!!!!!) I need to figure out how to cook gluten-free.  Come along for the ride!
